INTRODUCING PALMYRA JAGGERY, CLEAN & LEAN 'SUGAR'

We’ve got a bit of a bumper blog for you this week thanks to our friends at Conscious Foods. You have heard me raving about their Palmyra Jaggery over the past few weeks as I seem to be using it in more and more recipes. I honestly don’t know how I cooked without it so this week we have a roundup of all the lovely recipes the jaggery has helped me create. Also watch out next week for a fab sausage casserole which has jaggery as a hidden ingredient. 

The benefit of the jaggery is huge. First and foremost it completely conforms to the MCL way of eating – no refined sugars. Jaggery is natural, unrefined and packed with nutrients. Conscious Foods have summarised it much better than I ever could so have a read below and tell me what’s not to love? The winning factor of this product for me is how easily you can substitute sugar with it - much easier when needing a dry ingredient rather than the agave nectar most of us have got used to using. In its dry powdered form it is great for dusting over yoghurt, using in cakes and breads (yes they can be clean too, check out the Cherry Bakewell cake in the new eBook and the sweet potato bread in my last blog) and for sweetening drinks if needed. Another bonus for me is how little you need. Whatever amount of sugar you would use in a recipe, halve it. I often only add ½ teaspoon to recipes and it is more than enough. It also has a gorgeous caramelised taste to it which is lovely – maximize this taste by topping porridge with a banana, sprinkling over some jaggery and warming through in the microwave for a few seconds - heaven!

SWEET & CREAMY OVERNIGHT OATS

Ingredients

1 cup oats
1 cup nut milk
1 tsp Palmyra jaggery
1 tsp raw cacao
1 tsp chia seeds
handful blueberries
handful chopped nuts of your choice

1. Add all ingredients to a jar or plastic container with a sealed lid and mix well
2. Place in fridge and allow ingredients to mingle and get to know each other overnight!
3. Enjoy in the morning straight from container or serve up and top with more fruit and nuts as desired.

 

TURMERIC PORRIDGE

Amazing gluten and dairy free porridge to warm and soothe you on a not so summery morning - this was my breakfast today!

Ingredients

1 cup cooked quinoa
1/2 tsp turmeric
1/4 tsp cinnamon
6-8 pistachios
Palmyra jaggery to taste
1/2 cup almond milk

1. Add cooked quinoa and almond milk to a pan
2. Add all other ingredients apart from pistachios
3. Warm porridge through and transfer to a bowl
4. Taste and add more jaggery if required
5. Top with pistachios
